The association was founded in 1946 and it is now composed of 550 small olive oil producers which, according to the statute, must be olive groves owners from Malcesine or from the neighbouring towns. The consortium of Malcesine's policy imposes the exclusive processing of the members' olives and the commercialization of their own oil.

On average, 400000 kg of olives are processed every year. Half of 70000-80000 kg of the oil produced is intended for personal use while the other half is available at the retail outlets.

The olive oil of Malcesine has uniques and unparalleled features thanks to its cultivar casaliva, a mild weather and the kind of terrain where centuries-old olive trees grow. Olives tree growers harvest the product by hand and immediately delivers it to the association’s olive oil mill to be pressed. This olive oil presents a very low acidity rate, a sweet almond fruity taste and an intense golden green colour due to the high chlorophyll rate.
The PDO recognition, named “Garda” and assigned in 1997, is a further guarantee of the origin and of the finest organoleptic of this product.
Our oil is recommended for the local dishes such as, risotto with Garda Lake fish and pike with polenta. Olive oil is perfect for a raw, natural use, to dress bruschetta, salads and different vegetables dishes.

The new Museum of the olive tree includes a section dedicated to our farmers, growers and woodcutters’ life and their job. In order to recreate the atmosphere of old times, the museum also features old tools, equipments and utensils used to produce oil.

The Olive growers consortium of Malcesine organizes every Friday guided tours of the olive oil mill and Olive tree's museum, by reservation. Oil, bruschetta and wine tasting will be served after the visit.
